TEXTURE

•             Firm texture, best when sliced medium thick

•             Burst undertooth of sweet backfat

FLAVOUR

•             Balanced towards sweet rather than savoury with subtle herb and strong back-fat

•             Long-lasting and subtle sweet porky notes developing into a salty end note.
